06 Nov Hughie Sweeney’s Thai Flavoured Irish Mussels
This is a quick and easy dish that’s not expensive to make. We normally have this as a starter (One pot stuff).
Ingredients: Servers 4
2 KG Fresh Mussels
2 Tbsp. Sesame Oil
1 Chilli deseeded
1 Clove garlic finely chopped
Juice of 1 lime
1 Tbsp. Thai Fish sauce
2 Tbsp. Fresh Coriander
Thumb size piece of ginger finely chopped or grated
1 Bunch of Spring onion finely sliced
First you need to de-beard the mussels. Wash them in cold water first. Some mussels may be already open. If you tap them gently and they close they are ok to use. If not discard any open ones. Scrape the barnacles with a knife and pull out the beards.
Mix the lime juice, sesame oil fish sauce, garlic, chilli, ginger and coriander in a large saucepan and add your mussels. Place a lid on the sauce pan and cook at full heat for about three and a half minutes or until the mussel have opened. Do not use any mussels that are still closed after cooking. Bowl up and sprinkle with some of your sliced spring onion.
